Description

These delightful, grain-free bars offer the perfect balance of tart fruit and a buttery, nutty almond crust. Naturally sweetened with maple syrup and crafted without eggs, dairy, or gluten, these bars are a clean yet indulgent dessert perfect for any holiday gathering or cozy afternoon snack. They feature a vibrant, jammy cranberry filling sandwiched between two layers of golden, almond-based crumble that is incredibly simple to prepare.


Ingredients

1 1/2 cups cranberry sauce (homemade or store-bought)
2 cups super fine blanched almond flour
3 Tbsp coconut oil, melted
3 Tbsp pure maple syrup
1 pinch sea salt


Instructions

Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
In a large mixing bowl, combine the almond flour, melted coconut oil, maple syrup, and sea salt until the mixture resembles a coarse, crumbly dough.
Press about two-thirds of the dough firmly into the bottom of the prepared baking pan to form an even base.
Spread the cranberry sauce evenly over the almond crust layer.
Crumble the remaining dough over the top of the cranberry layer.
Bake for 25-30 minutes or until the topping is golden brown and the cranberry filling is bubbling.
Allow the bars to cool completely in the pan before slicing into squares, which helps the filling set perfectly.


Notes

Ensure you use superfine blanched almond flour for the best texture. If using homemade cranberry sauce, ensure it is thick and not too watery. Store leftovers in an airtight container in the refrigerator for up to 5 days.
