3 large Granny Smith apples, peeled, cored, and sliced

1/2 teaspoon pure vanilla extract
1/3 cup brown sugar
1 teaspoon ground cinnamon
1/2 cup old-fashioned oats
1/4 cup all-purpose flour
2 tablespoons brown sugar
2 tablespoons unsalted butter, melted


Instructions

Preheat your oven to 350°F and grease an 8×8 inch baking pan.
For the crust, combine 1 cup flour, 1/4 cup sugar, and salt; cut in cold butter and vanilla until crumbly.
Press the crust mixture firmly into the bottom of the prepared pan and bake for 12-15 minutes.
While the crust bakes, toss the apple slices with melted butter, vanilla, brown sugar, and cinnamon.
Spread the apple mixture evenly over the partially baked crust.
In a small bowl, combine the oats, 1/4 cup flour, 2 tablespoons brown sugar, and 2 tablespoons melted butter to create the streusel.
Sprinkle the streusel topping over the apples.
Bake for 30-35 minutes or until the apples are tender and the topping is golden brown.
Allow the bars to cool completely in the pan before slicing into squares.
